Since taking on the CEO role in December 2022, Chu has made it a point to work alongside his staff at a Kopitiam outlet once a month. During a recent visit to the Kopitiam at FairPrice Hub in Joo Koon, he shared a memorable experience from his time at a Heavenly Wang outlet right after the Covid-19 pandemic. “When I arrived, all the tables were piled high with dirty plates and cups. The dishwasher was broken, so I ended up washing dishes for an hour and a half,” he recalled, chuckling at how drenched he was by the end of it. “The staff still remember that day!”

This hands-on experience opened Chu’s eyes to the hard work his employees put in daily. He realised that even small changes, like fixing a dishwasher, could make a huge difference for his team. “I want to ease their workload,” he explained.

Sometimes, when a new stall opens, hiring can be tough. “In those situations, I need to set an example,” he added. By stepping in during busy times and giving his team breaks, he shows them that their boss is there to support them.

The food service industry is currently grappling with issues like manpower shortages and rising costs. He’s also a talented cook, sharing that his Teochew specialty is braised dishes, which he hopes to introduce at his food courts one day.

He’s noticed a shift in Singaporeans’ eating habits, with many becoming more health-conscious. “After the pandemic, people’s dietary needs seem to have simplified,” he observed. New food trends, like mala hot pot, have also become staples at food courts.

Before joining FairPrice Group, Chu led BreadTalk Group and PSC Corporation. Under his guidance, Kopitiam retired its physical discount card and launched a mobile app in June 2023, which has already attracted over 700,000 users. Initially, some older customers resisted the change, but he’s pleased to see many seniors now embracing the app.

In October 2023, he introduced a series of ready-to-eat meals called Home Flavours, designed for busy individuals balancing work and family life.
